Rhubarb Kuchen


My mum's Apfelkuchen turned Rhubarb Kuchen 

Beat:
2 eggs
1/4 sugar

Mix: 
1 1/2 flour
1 1/2 tsp b.p
a pinch of salt

Heat oven to 350 F

Other ingredients:

3/4 cup Milk

Add enough milk to make a thick batter.

Pour the thick batter into a greased metal tray, or use a piece of parchment at the bottom (much easier) 

The baked result is a layer of dough/batter that is very thin/flat so spread it out using a spatula, my mother always made it in a flat baking tray type pan. Spread it nice and evenly.

Fruit: Apple, peeled, cored and sliced thinly or in this case Rhubarb, cut into thin 1/4 inch rings

Layer the thin slices of apple leaving a small edge (kind of like a pizza but thinner) 


To make the crumb topping

Ingredients:

1/2 cup butter, softened 
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
2/3 cup all-purpose flour + a tbsp if needed
1 teaspoon ground cinnamon  (I use the real Sri Lankan Ceylon cinnamon)
Pinch or grating of ground nutmeg

Mix all the dry ingredients and add the butter, using your fingers press them together to create little crumbs. 

Lay the crumb mixture over the fruit in an even layer and bake for 30 minutes in a  preheated 350 F oven.

Delicious Saturday Meal



Here is our delicious saturday meal - following our big feast on friday (10th of June)

My mother put together a yummy salmon casserole which I called "engagement salmon" because later that night we watched Ina Garten prepare her take on the famous "engagement chicken" and it was very similar to this dish only mum used limes in the salmon instead of the lemons in the chicken but it still had lots of onion and it was delicious !

Along with that we made Chef Lidia's pasta with homemade bread crumbs Mum had a loaf in the freezer so to my amazement she began grating it and then sauteeing it in the olive oil and garlic ... then tossing the fresh pasta in it. YumYum!

This truly was one of the yummiest pasta dishes I've had, so simple but so comforting.

We also roasted asparagus (salt & pepper, olive oil drizzle- bake on 400-425 until tender then squeeze lemon juice on) and made salad. It was a really memorable and great day.

Honey our cat gave me a not so pleasant face when I pointed the camera at her but she's a real sweety :)

BBQ Sirloin roast

Cooking meat in the middle east is simple, we either grill it (kebobs, tikka, kufta) or we stew it (different parts of the animal - shoulder, stewing meats, heads, feet...whatever)

And then there are a million things to do with minced meat of various fat contents -like fillings for all kinds of kubbas and stuffings.. it's very versatile as my mother says.

This is the sort of thing I'm familiar with, and then on top of that I used to be a vegetarian for all my teen years so I pretty much missed out on learning how to cook meats.

Now that I eat meat again I've began exploring the world of western meat cooking methods like steaks and burgers. There is nothing like a good steak I think, and with all the cuts I try to keep it simple to let the true flavour of the meat shine.

Most of the people I know wouldn't go near a piece of meat cooked anything less than well done - the occasional "done" tikka is ok but we really like to over cook our meat.

At our family BBQ last summer everyone other than my brave 'foodie' mother could not stomach the thought of eating a perfectly cooked medium lamb chop so we had to re-bake the already BBQed chops.

Ohh well! :)

The other day I came upon a giant sirloin roast (top or bottom? Cant' remember what the package was labelled as but it was reasonably priced) I had froze them both until I did some research on what to do with them.

The first one I had totally ruined, thinking that it was a good cut for braising/stewing I removed all the good pieces of meat (took a good 30 mins !) and then browned and braised it in my big pot and the end result was a really dry texture, nothing like stewing meat at all.

The next day I thawed out the next piece, I was determined to make things right so this time I dried the meat and rubbed it with a good helping of dijon mustard then sprinkled it with BBQ spice blend (salt in the mix was good, though I added a 1/4 cup of brown sugar to it) and then rubbed that all over the meat.

Once it came to room temp and marinated well I fired up the BBQ grill and seared up the huge piece of meat until nice and brown on all sides. Now I put the grill on low and covered the top part loosely with a piece of foil and left the lid of the BBQ open.

This cooked for about 45 mins, turning half way through and making sure it did not burn from time to time. The smell in the neighbourhood was heavenly and that crust with the brown sugar and spice rub looked so delicious!

I was hoping at this point that things were ok inside the meat and that it turned out edible, so I removed it and let it rest on a tray tented (using a foil tent to let all the juices distribute)

When it was time to eat I sliced into it and to my surprise it was perfect!!! Yay!
Just the way I like my meat, medium. Mmmm!

The bottom shots are of the first day it was grilled, and the sandwiches were made with cold leftovers, it went a long way and was really good with that flavourful sweet crust, even the juices dripping off and collecting in the pan were so yummy!

Give it a try, it's like BBQ roast beef (I have yet to learn how to make a good oven/slow cooker roast beef) and leftovers are amazing.

Favourite brownie recipe ever!


My favourite brownie recipe

3/4 cup vegetable oil (or sunflower)
1 1/2 cup white sugar
1 1/2 tsp vanilla extract
3 eggs
3/4 cup all purpose flour

1/3 cup cocoa plus 3 tbsp
1/4 tsp baking powder plus 1/8 tsp
1/4 tsp salt plus 1/8 tsp salt

3/4 cups chopped walnuts (optional)


1. Preheat oven to 350 degrees F (175 degrees C). If using a glass pan put oven on 325 F.

(Grease a 8x8 inch baking pan.)

2. In a medium bowl, mix together the oil, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt; gradually stir into the egg mixture until well blended. Stir in walnuts, if desired. Spread the batter evenly into the prepared pan.
3. Bake for 30-40 minutes (this is just approximate time so keep an eye out!) or until the brownie begins to pull away from edges of pan.

Let cool on a wire rack before cutting into squares or frosting/glazing it.

A nice ganache topping with a sprinkling of salt makes this brownie just a bit more special!

Awesome potatoes!





Love love love this recipe!! These are SO crispy that you'll be heard across the room munchin on these delicious potatoes with their yummy crispy skins.

Here's how it goes:

Boil your baby new potatoes in a nice big pot of salted water, once fork tender, strain and let cool, place in the fridge overnight.

The following day, chop then up in wedges or rings keep the skin on or remove it but it's crispy goodness. Toss with oil, salt/pepper or any seasonings you love and bake at 425 flipping them throughout so all sides are golden. I use convection which just cooks all sides in one shot.

Enjoy with your favorite dip, ketchup or a little vinegar and salt, a fresh herb dressing, cheese sauce or gravy!

For the dip I mixed together extra rich sour cream, a squeeze of lemon juice, some prepared horseradish paste, salt, chopped chives and let that sit in the fridge overnight as well for the flavours to blend.
