Date & Walnut brown butter "Chewy"


Date & Walnut brown butter "chewy" cookie.

Adapted from Alton's chocolate chip "The chewy" recipe (original recipe below)

Ingredients

2 sticks unsalted butter
2 1/4 cups bread flour
1 teaspoon kosher salt
1 teaspoon baking soda
1/4 cup sugar
1 cup brown sugar plus 2 tbsp
2 tbsp molasses
1 egg
1 egg yolk
2 tablespoons milk
1 1/2 teaspoons vanilla extract
1 cup chopped dates
1 cup walnuts

Directions

Heat oven to 375 degrees F.

Melt the butter in a heavy-bottom medium saucepan over low heat, you can stop here or you can let it "brown" which takes about 15 minutes or so (stir it from time to time and once it smells right and the bits are golden strain it through a sieve and set the butter aside to cool)

Sift together the flour, salt, and baking soda and set aside.

Pour the melted butter in the mixer's work bowl. Add the sugar and brown sugar, plus molasses. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chopped dates and walnuts.

Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.





Alton Brown's The Chewy recipe

I made these on Christmas and they were quite yummy (proved by the fact that they were all eaten by the end of the day). However, mine only took about 7-8 minutes to bake. I burned the first batch at 12 minutes. So I'm not sure if I made my cookies smaller (although I think I made them rather large) or if I altered something when I halved the recipe. Thanks again for the recipe! And I absolutly love your owl cup. I have a million things owl in my house.
