Cauliflower Popcorn



Cauliflower popcorn is a fun twist on the regular roasted cauliflower florets or steaks, these are just smaller, much smaller, and they roast all over and can be enjoyed as a snack!

Feel free to spice them as you wish, lately I've been keeping my food choices very plain due to the pregnancy morning sickness so I just went with salt, pepper and olive oil but how lovely would it be to try curry, or cumin, paprika, or even truffle salt (the one from Olive That has been one of my new faves!) 



Preheat oven to 400 F and begin removing the large florets from the cauliflower. Use as mall knife to work through each one and chop it down to smaller bits, roughly the size of popcorn!

Place a piece of parchment on a nice large tray, so that all the pieces can lay flat and roast beautifully. Toss the cauliflower in a drizzle of olive oil using your hands and sprinkle with the desired spice of seasoning.

Bake until roasted, tender inside with crispy golden outsides, watching not to burn any and you may need to flip or move them around from time to time.
You could use a convection roast setting if you have one in your oven, it roasts top and bottom at the same time.
