Local Ontario produce!


Ontario strawberries are something else! This year we didn't get a chance to pick any but over the long weekend stopped into the farm on the last day of Pick Your Own and managed to pick some raspberries and grab a crate full of fresh strawberries.

Today's recipe is SO simple and delicious!

Equal parts:

-Fresh local strawberries, sliced or kept whole.
-Baby bocconcini cheese (these are baby fresh mozzarella or buffalo mozzarella balls)

Sprinkle with salt and pepper and drizzle balsamic glaze over top:

To make balsamic glaze:

1 cup balsamic vinegar
1/4 cup brown sugar
Reduce on medium in a saucepan until it's thick, keep an eye on it so it doesn't burn and remember as it cools it gets a bit thicker so when it looks syrupy simply pour it into a jar or in a glass bowl (gently) and allow it to cool. Stores in the fridge beautifully!

Add basil to the salad if desired

Enjoy! Great salad as a side to a protein or as an appetizer if skewered onto an appetizer skewer.
