Watermelon lemonade with a hint of raspberry

Makes 4 glasses
Recipe: Take about 4 cups of watermelon fruit (flesh only) and put it in the blender, blend it well until smooth. (may need to add a few tbsp of water to get it to blend down into a liquid)
Strain it through a wire strainer using a spatula to push it through. You should get a water like consistency with pump and seed left behind (we're taking the white seeds because the watermelon was "seedless" )

Squeeze 1 lemon and add some fresh raspberry puree (strained too from those tiny seeds) I made my own after raspberry picking last fall and froze them in small ice cubes which I thawed out, used about 1 ice cube (it had sugar in it) Add some simple syrup, I've only added about 4 tbsp because the watermelon was sweet and ripe so taste and adjust.

Mix the raspberry sweet lemon mixture with your watermelon and stir well.

Put ice cubes in glasses and pour the pink drink over, using mint or lemon slices as garnish.

Enjoy!

  2. Awww thank you so much! This means a lot to me.

    I'm still getting over the heart ache from the loss of my little ones (my kittens) but life carries on and I've tried to jump back onto the food blogging wagon, with a lot of encouragement and support I've began feeling better and enjoying time with friends and family (around food of course!)
    Stick around, I hope to bring some good and interesting recipes to the table this summer.
