If I had to choose a New Year's resolution for 2013 I'd have to say eating more fiber and salads.. I guess it won't be too difficult with these two recipes.
My favourite homemade oatmeal recipe. This time topped with agave, and a little cinnamon and brown sugar for some "crunch" (toasted nuts would be healthier and achieve the same texture)
For the salad I was inspired by my roots of course, the Middle East! ... and pretty much all the ingredients in my fridge. I love a good "clean up my kitchen" recipe and by that I mean just using all the things you've got around. This works for soups mostly but salads are just as versatile. It's just a fun and creative way to spend my weekend afternoon.
I had just picked up some watercress too from the supermarket earlier so this inspired me to layer it over the gourmet salad or baby greens blend.
Starting with all the ingredients on the counter (except lettuce) I let them come to room temperature (cold veggies hurt my teeth and have no flavour to me)
I begin with the salad bowl grating a medium clove of garlic and then crushing it with a dash of salt in my fingers and along the sides of the bowl, squeezing some lemon juice, drizzling olive oil and you've got the basics. I go further by adding a pinch of black pepper and a dash of sumac (it's a middle eastern dry hard berry that is ground up into a deep red or sometimes maroon tinged spice with a tart flavour)
I chop tomatoes, cucumbers, red onion and add to the bowl.
Large handfuls of lettuces top the veggies and next it's laced with the tender watercress shoots.
A little crumbled feta, and a few of these delightful black olive feta crackers by President's choice (which I picked up because they were 50% off at the supermarket and looked cool - I'm a bargain hunter :))
